Avocado Baked Eggs


Ingredients:
  • 1 avocado
  • 2 eggs
  • salt, black pepper, and cayenne pepper to taste
  • bacon bits (optional)
  • chopped green onions (optional)
Avocado Baked Eggs
Directions:
  1. Preheat oven to 400 ºF.
  2. Cut avocado in half, remove pit, and use a spoon to scoop out some avocado pulp from the centre so the egg fits.
  3. Crack the eggs and add them to each avocado slice (it is best to crack the eggs over a small bowl and allow some of the egg whites to run in to the bowl since the entire egg will not fit in the avocado slice).
  4. Season each avocado slice with salt, black pepper, and cayenne pepper and bake for 15 minutes (or 20 minutes for fully cooked egg).
